Combine paprika, dried oregano, cumin, onion powder, cinnamon, brown sugar, chilli flakes (opt.), salt and pepper.

Mince garlic. Dice onion. Measure out corn. Drain black beans.

Place a deep, oven proof casserole pot or saute pan on high heat. Add oil, garlic, onion, tomato paste and spice mix, and cook for 1-2 mins. Add mince, breaking up, until browned (4-5 mins).

Add salsa, whole baby tomatoes, black beans, Worcestershire sauce, corn kernels, cornflour and cook, stirring, for 3 mins, until thickened slightly.

Break up microwave rice, stir into the mixture, then smooth the top. Turn on your oven grill.

Grate over cheese, top with oregano and place under the grill for 3-4 mins, until golden. Watch carefully.

Rinse and chop coriander. Trim and slice green onions. Halve avocado and slice. Slice lime into wedges.
¼ bunch coriander, ¼ bunch green onion, 1 avocado, 2 lime
Serve kids bake topped with avocado. For adults, crumble feta over the cheesy pan and top with coriander, green onions, avocado slices and lime wedges. Enjoy!
