Ingredients

  • 3 cloves garlic
  • 3 cm ginger
  • 1 lime
  • ¼ cup kecap manis
  • 500 g chicken thigh fillets
  • 100 g baby spinach
  • 1 mango
  • 1 Lebanese cucumber
  • bunch coriander
  • 1 lime
  • 2 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 450 g microwave rice
  • Salt and pepper

Instructions

  • Peel and finely grate ginger and garlic into a bowl. Zest and juice lime into the bowl. Add kecap manis and stir to combine. Add chicken, coat and set aside.
