Preheat your oven to 220 C (425 F) fan-forced grill. Get out a baking tray.
Slice large washed potatoes into wedges (in half, then into ½ cm slices), and spread out in the tray. Drizzle over olive oil, stock powder and water, and toss to combine. Bake on the middle tray.
800 g White potatoes, 2 tablespoon olive oil, 1 teaspoon Chicken stock powder, ½ cup water
Slice skin off sausage and remove from casing. Slice tomatoes into quarters. Slice shallot in half and remove skin.
500 g Italian-style Pork Sausages, 4 Truss tomatoes, 2 Shallot
Add tomatoes and shallots to the baking tray, mix through, then break up sausage so it sits on top. Return to the oven back in the oven for 20-25 mins until sausages are crispy and golden.
Once the timer goes, mix through baby spinach leaves until wilted.
120 g Baby spinach
To serve, top with crumbled feta, squeeze over lemon, sprinkle cracked black pepper. Enjoy.
