Preheat your oven to 220 C and get out a small and a large baking tray.
Dice cauliflower into small pieces (around 1 cm) and add to the large tray with olive oil, salt and pepper (opt.). Put in the oven for 15 minutes.

Slice tough ends from asparagus and add to the small tray with olive oil, salt and pepper (opt.). Place in the oven for 10 minutes.

In a large bowl add ricotta, then grate in cheddar cheese and parmesan cheese and finely zest a little bit of the lemon. Add cinnamon, salt and pepper (opt.) and mix well.

Peel garlic, slice and rub the cut side over the toasts (opt.). Add tomato paste to each slice of toast and a sprinkle of dried oregano.

Once cauliflower has cooked, remove from the oven and turn the oven grill on. Asparagus should be done now too, so remove and set aside. Place cauliflower in the bowl of cheese and mix well.
Place the toast tomato side up on the large tray, then heap with cauliflower cheese mix. Add back into the oven (under the grill) for 3 minutes or until cheese is bubbling.
Serve cheesy cauliflower toast pizzas with a side of roast asparagus. Finely grate over a little more lemon zest and parmesan cheese, and give a good crack of black pepper to taste. You can also drizzle over balsamic vinegar or balsamic glaze if you have it. To serve kids, chop asparagus and toast into fingers, and hold the lemon zest, salt and pepper.
