This Cheesy Cauliflower Pizza Toast combines delicious roast cauliflower with a delicious pizza vibes. Serve with grilled asparagus and dustings of lemon zest and finely shaved parmesan it's a perfect satisfying but light dinner.
Sunday nights were often toasted sandwich night at our house when I was growing up. Something about easy toasted cheese just makes me want to put on pajamas and watch the BBC's Pride and Prejudice.

Cheesy Cauliflower Pizza Toast Ingredients
This is the perfect easy (cheesy) dinner.
- Cauliflower
- Olive oil
- Sourdough bread
- Asparagus
- Ricotta
- Cheddar cheese
- Parmesan cheese
- Lemon
- Cinnamon
- Garlic
- Tomato paste
- Dried oregano leaves
- Balsamic vinegar or glaze (opt.)
- Salt and pepper

How to make Cheesy Cauliflower Pizza Toast
1. Preheat your oven to 220 C and get out a small and a large baking tray.
2. Dice cauliflower into small pieces (around 1 cm) and add to the large tray with olive oil, salt and pepper (opt.). Put in the oven for 15 minutes.

3. Slice sourdough into large pieces and put in the toaster. Continue until all pieces are toasted. Meanwhile continue to the next step >

4. Slice tough ends from asparagus and add to the small tray with olive oil, salt and pepper (opt.). Place in the oven for 10 minutes.
- 2 bunches asparagus
- 2 teaspoon olive oil

5. In a large bowl add ricotta, then grate in cheddar cheese and parmesan cheese and finely zest a little bit of the lemon. Add cinnamon, salt and pepper (opt.) and mix well.
- 250g ricotta
- 120g cheddar cheese
- 40g parmesan cheese
- 1 lemon
- ½ teaspoon cinnamon
- Salt and pepper
6. Peel garlic, slice and rub the cut side over the toasts (opt.). Add tomato paste to each slice of toast and a sprinkle of dried oregano.

- 2 teaspoon dried oregano leaves
7. Once cauliflower has cooked, remove from the oven and turn the oven grill on. Asparagus should be done now too, so remove and set aside. Place cauliflower in the bowl of cheese and mix well.
8. Place the toast tomato side up on the large tray, then heap with cauliflower cheese mix. Add back into the oven (under the grill) for 3 minutes or until cheese is bubbling.
9. Serve cheesy cauliflower pizza toasts with a side of roast asparagus. Finely grate over a little more lemon zest and parmesan cheese, and give a good crack of black pepper to taste. You can also drizzle over balsamic vinegar or balsamic glaze if you have it. To serve kids, chop asparagus and toast into fingers, and hold the lemon zest, salt and pepper.

Substitutions
Here are some options for gluten free and dairy free diets.
- Gluten Free - use your favourite gluten free bread.
- Dairy Free - Swap out ricotta for dairy-free feta, and add egg (1 per 2 serves) and nutritional yeast in place of parmesan. Use the oven function instead of the grill and you will need to leave in the oven for 10 minutes at 200 C.
Kid-Friendly Variations
To make this recipe kid-friendly
- Salt - Hold the salt until the end and season the adult's cauliflower mix only. Season asparagus after you've roasted it.
- Garlic - Very little kids may not like the taste of garlic on their toasts - it's quite a strong flavour. Skip this step on their slices of toast.
- Finishing - Skip extra lemon zest or balsamic vinegar on the kid's toasts, and chop into fingers or small pieces. Chop asparagus into small pieces too.

Top tip
Make sure you chop the cauliflower up finely enough for it to roast in 15 minutes - you want it to be about 1 cm cubes.
