This Salmon tray bake recipe is one of the easiest going around. Golden potatoes, salty, molten feta and fresh capsicum and dill. Heaven.
I have to say that this is in my top ten favourite dinners. There are so many things that work about this dish. Every mouthful is a delight! And it is seriously one of the easiest dinners you can make. Crispy golden baked potatoes, perfectly cooked paprika salmon, fresh dill, a little lemon juice and molten, just golden around the edges feta and baked capsicum.
And the best part? You just pop it in the oven, and let that do the work for you.
I’ve paired it with a seriously good looking salad of fresh Baby Gem or Iceberg lettuce wedges, avocado fans, capers, dill and a lemon yoghurt dressing which is the perfect accompaniment to the satisfying potatoes and salmon.

Easy Salmon Recipe Ingredients

How to make Easy Salmon Recipe
1. Preheat your oven to 200 C and line a baking tray.
2. Cut your potatoes into ½ cm rounds (skin on), place in a bowl, cover with water and in the microwave for 5 minutes.
- 4 medium potatoes (600g)
3. Slice capsicum into strips and chop feta into squares. Zest and juice lemon. Sprinkle paprika, salt and pepper over salmon for adults. Little kids may prefer plain salmon. Set aside.
- 1 red capsicum
- 200g feta cheese
- 1 lemon
- 1 tablespoon paprika
- Salt and pepper
- 4 pieces salmon (skin on or off as you prefer)
4. Once potatoes are done in the microwave, drain, and add to the tray. Drizzle over olive oil, and add salt and pepper (opt.) and place in the oven for 10 minutes.
- 1.5 tablespoon olive oil

5. Mix together yoghurt, lemon juice, olive oil, salt and pepper (opt.) to make a dressing.
- 2 tablespoon Greek yoghurt
- 2 tablespoon lemon juice
- 1 tablespoon olive oil

6. Once the 10 minutes is up, take out the tray, flip potatoes and add capsicum, feta and salmon, then return to the oven for 12 minutes (depending on thickness of your salmon and how well you like it cooked, you may need to keep it in for longer).

7. Slice lettuce into wedges and avocado into slices. Little ones may prefer their avocado and lettuce plain, if so add to their plates now.
Add the rest to a serving bowl, then drizzle over dressing and sprinkle over capers. Tear half the dill and scatter over the salad (reserve half to top the salmon).
- ¾ iceberg lettuce (or 2 gem or 1 cos)

- 2 teaspoon baby capers
- ½ bunch dill
8. Serve up salmon with a dusting of lemon zest, remaining dill, potatoes, feta and capsicum, alongside the green salad.
Very little ones may just prefer flaked salmon (careful of bones), plain avocado, potato and a wedge of lettuce without dressing - but it’s up to you!

Substitutions
- Alternative protein - Chicken tenderloins would work really well here, or thin cut chicken breast. If you use chicken thigh fillets, place in the oven the same time as the potatoes.
- Vegetarian - You can use “fish free” cakes, tofu slices, pumpkin slices, Halloumi (and then remove the feta), or a combination of these to make this dish vegetarian.
- Gluten Free - This recipe is gluten free.
- Dairy Free - Swap Feta for olives (green or black) and swap Greek yoghurt for mayonnaise in the dressing.
Kid-Friendly Variations
- Kids may prefer their salmon fillet without paprika, and take care for small bones.
- Serve avocado and lettuce wedge without dressing, capers or dill.
- Add salt and pepper to adult plates at the end.

No need to peel your potatoes, simply give them a good wash and slice into rounds.
