Chicken Mince Burgers
- 500 g Chicken mince (ground chicken)
- 1 tsp garlic powder (if you don't have garlic powder, you can use onion powder instead).
- 1 tsp paprika
- ⅔ cup panko breadcrumbs
- ½ bunch green onions scallions
- 4 hamburger buns with sesame seed - or any bun you prefer.
- 2 tsp light soy sauce
- 2 tbsp Kewpie Mayonnaise
- 2 tbsp tomato sauce ketchup
- ¼ tsp salt and pepper
- 1 tbsp olive oil
Coleslaw
- 1 baby cos lettuce romaine lettuce
- 1 Lebanese cucumber
- ½ Lemon
- 1 tbsp sesame oil
- 1 tsp white sugar

Golden roast potatoes and carrots

- 1 tsp garlic powder
- 1 tsp paprika

Gluten-free: There are some great hamburger buns and panko bread crumbs that are gluten-free, so give these a try, and swap the soy sauce for tamari.
Alternatives to Chicken mince: If you don't like ground meat you can use chicken breast instead of chicken mince and marinate the chicken in a mixture of olive oil, paprika and garlic powder. Or you can use ground turkey to make turkey burgers.
Customize Your Slaw: Feel free to get creative with your slaw. You can add red onion, grated carrots, red cabbage, fresh herbs or other favorite vegetables for added crunch and flavor.
Sauces and Condiments: Experiment with different sauces and condiments to suit your taste. Some people like a bit of spice with sriracha mayo, while others prefer a classic burger sauce or even Dijon mustard and sour cream. You can add Worcestershire sauce to the burger patty mixture if you like instead of soy sauce.

How to make Homemade Chicken Mince Burgers
- Preheat your oven to 220°C (425°F) and line a baking tray with baking paper (parchment paper).
- Slice carrots and potatoes into ½ cm rounds. Toss them with olive oil, paprika, garlic powder, salt, and pepper. Bake for 20 mins at 220°C, turning halfway.
- Finely slice green onions.
- Mix chicken mince, soy sauce, panko breadcrumbs, paprika, garlic powder, salt, black pepper, and half of the green onions in a large bowl. Form patties and cook in a frying pan with oil over medium-high heat for 4 mins each side. TIP - When forming your chicken mince patties, make sure they are of consistent size and thickness so they cook evenly. And don't overcook the patties - any longer than about 4 minutes can make them dry, and we want these babies juicy! If you have a meat thermometer, check the internal temperature reaches 165°F (74°C).
- Meanwhile, finely slice lettuce and cucumber. Place them in a bowl with the remaining green onions. Once just about ready to serve, drizzle with sesame oil, squeeze lemon juice, sprinkle salt and sugar, and toss.
- Toast buns in the oven, then assemble burgers with kewpie mayo, tomato sauce, a chicken patty, and slaw. Serve with baked potato and carrots on the side, and extra slaw. Enjoy!
TIP: Assemble your burgers just before serving to keep the buns from getting soggy.

Wet your hands with water before forming the chicken mince burgers, this will help them not stick to your hands.
Pay attention to the cooking time for the chicken patties. Overcooking can make them dry. Aim for 4 minutes on each side or until they are fully cooked but still juicy.
If you're making these in advance, don't dress the coleslaw until time to serve.
Kid-Friendly Variations
Usually, the whole family will enjoy burgers, but to simplify these for very little kids you can:
- Slice cucumber into spears and serve separately
- Skip the paprika and garlic on the carrots and potatoes
- Slice patty into fingers and option to skip the green onions (scallions).

Store patties in an airtight container. Store coleslaw in a separate container. If dressed, store for just one day in the fridge as it will definitely get soggy. Serve bread in an airtight container
