We’ll start with a simple cocktail sauce, then fry up our prawns on the BBQ or in a frying pan with butter and paprika, and then serve on crisp lettuce with cucumber ribbons, lime, avocado and chilli if you want some kick.

How to make a Shrimp Burger
1. Preheat your oven to 220 C. Get out a baking tray and remove prawns from the fridge.
- 350g prawn cutlets
2. Slice potatoes into wedges, add to a bowl, cover with water and zap in the microwave for 5 minutes.

3. To make cocktail sauce, in a small bowl mix tomato sauce, mayonnaise, Dijon mustard, Worcestershire Sauce, Greek yoghurt, lime juice, salt and pepper (opt.). Set aside.
- 1.5 tablespoon tomato sauce
- 2 tablespoon mayonnaise
- 1 teaspoon Dijon mustard
- ½ teaspoon of Worcestershire sauce
- 1.5 tablespoon Greek yoghurt
- 1 lime
- Salt and pepper
4. Drain potatoes and lay on the baking tray. Drizzle over olive oil, salt and pepper and cook in oven for 20 minutes, or until they become golden wedges.

5. Pull apart lettuce leaves. Use a peeler to slice cucumber into ribbons. Slice avocado. Finely slice chilli if you want to add some kick, making sure you don’t touch other ingredients. Cut lime into wedges. Set aside.

6. Heat a frying pan on medium high heat. Add butter, melt, then add prawns to the pan and sprinkle over paprika and salt. Cook for 2-3 minutes each side.

- ½ teaspoon smoked paprika
- ½ teaspoon salt
7. Slice buns in half and place in the oven for just a minute or two, resting cut side on the oven rack. This should give you light scorch marks.

8. To serve, little ones may prefer elements served separately, and to skip the sauce and lettuce.
For adults, layer burger base, crisp lettuce, prawns (spoon over paprika butter), avocado slices, cocktail sauce, cucumber ribbons and chilli if using. Serve with a side of chips, remaining sauce and lime wedges.

How to know when your shrimp burgers are ready?
Shrimp (prawns) are the type of thing you really don't want to overcook. The best way is to cook on one side for 1-2 minutes on a hot pan with lots of butter, then once they are starting to turn opaque, flip and cook for just one more minute. This'll guarantee you perfectly cooked shrimp, every time.
Substitutions for Shrimp Burgers
- Alternative proteins - You can swap prawns for firm white fish or diced chicken breast or chicken tenderloins (just cook for a few minutes longer).
- Vegetarian - Halloumi would be a delicious substitute for the prawns in this burger.
- Dairy Free - Swap the Greek yoghurt for dairy free yoghurt or skip it and add a little more mayonnaise.
- Gluten Free - Use gluten free burger buns.
Kid-Friendly Variations
- Option to serve bun with slices of avocado.
- Option to serve chips without salt.
- Option to serve cucumber and prawns separately.

Top tip
When you make cucumber ribbons, peel just until you get to the seeds. Once you get to the seeds, stop and turn the cucumber and start again. The seeds will make it way too hard to peel.
