Sizzling Beef with Chilli Jam and Ginger served on a salad of soba noodles - this tasty dinner is so quick and easy, you'll find yourself making it night after night!
This dinner is filling enough for a winter dinner, but still tastes light and fresh. It's packed with the flavours of fresh ginger, the chilli jam on the beef is sticky and sweet and the dressing is packed with zesty lime. This is one of those dinners I have on repeat because it's, easy, healthy and delicious.
What do you need to make this Ginger Beef Salad?
- 500 g steak
- 1 cos lettuce
- ½ bunch coriander
- 1 Lebanese cucumber
- 1 avocado
- 1.5 limes
- 1.5 tbsp red wine vinegar
- 2 tbsp sesame oil
- 1 tbsp chilli jam sub tomato relish or mango chutney (3 tablespoon total for the recipe)
- 2 tsp vegetable oil 1.5 tablespoon total for the recipe
- 180 g soba noodles
- 1 tsp sesame oil
- 4 tbsp fresh ginger
- 2 cloves garlic
- ½ bunch green onions scallions
- 60 g roasted peanuts unsalted
- 1 tbsp vegetable oil 1.5 tablespoon total for the recipe
- 2 tbsp chilli jam
Top tip when making this Ginger Beef Soba Noodle Salad
You really only need to sear the beef for the shortest possible time - about 30 secs - 1 minute, and this will keep it lovely and tender.
Substitutions
- Instead of chilli jam you can use tomato relish or mango chutney.
- This recipe is gluten free and dairy free.
Kid-Friendly Variations
- Skip the chilli jam and dressing, or swap chilli jam for tomato relish or mango chutney.
- Serve noodles, avocado and greens separately.

Ingredients
- 500 g steak

Instructions
- Remove steak from the fridge and set aside to bring to room temperature (this will make it more tender). Place a large saucepan of water on to boil.500 g steak
- Chop lettuce and coriander leaves, and finely chop stalks. Slice cucumber into half moons. Peel and cube avocado. Place your child's portion of avocado, lettuce and cucumber on their plate, then add remaining ingredients to a serving bowl or platter.1 cos lettuce, 1 Lebanese cucumber, 1 avocado, ½ bunch coriander
- Zest then juice the lime into a small jug or bowl, then mix in vinegar, sesame oil and chilli jam (sub tomato chutney). This is your dressing.1.5 limes, 1.5 tablespoon red wine vinegar, 2 tablespoon sesame oil, 1 tablespoon chilli jam
- Slice steak into 2 cm cubes, then drizzle with vegetable oil.500 g steak, 2 teaspoon vegetable oil
- Cook soba noodles in boiling water according to packet instructions (about 4 mins). Stir occasionally while cooking, then drain, rinse in cool water and add a few drops of sesame oil so they don't stick.180 g soba noodles, 1 teaspoon sesame oil
- Peel and slice ginger into matchsticks and peel and chop garlic. Trim and finely slice green onions. Roughly chop peanuts.4 tablespoon fresh ginger, 2 cloves garlic, ½ bunch green onions, 60 g roasted peanuts
- Heat a wok or deep frying pan over high heat, add vegetable oil, garlic and ginger and stir for about a minute, or until fragrant.4 tablespoon fresh ginger, 1 tablespoon vegetable oil, 2 cloves garlic
- Add steak and cook for 30 secs on one side without touching (so it sears), then stir fry for 1-2 mins, being careful to not overcook. Remove the pan from heat and mix through chilli jam or tomato chutney for kids, or keep their steak plain.500 g steak, 2 tablespoon chilli jam
- Serve kids soba noodles, veggies and beef on a plate. Option to add a little dressing if not too spicy.Serve adults salad topped with the drained soba noodles, sizzling beef, green onions, peanuts and dressing.
