This Fried Rice Recipe is one of this week's fuss-free recipes. It's the perfect recipe to add new life to leftover cooked rice, or if you have some microwave rice you can use that too. It's also a great way to use up leftover veggies, so feel free to get creative and use whatever you have in your vegetable bin.

- 2 Carrots
- ½ bunch Green onions (spring onions)
- 2 Limes
- ½ bunch Coriander

- 2 Large Eggs
- 2 tbsp Light Soy sauce (or regular soy sauce)
- 2 tbsp Sesame oil
- ½ cup Frozen peas
- 4 tsp Sesame seeds
Substitutions and Add-ins
- Vegetables - this recipe is a great way to use up leftover vegetables, so feel free to use whatever you have in your vegetable bin, like bell peppers (capsicum), green beans or snap peas.
- Sauces - if you want you can swap tomato sauce for oyster sauce, or a combination of light soy sauce and dark soy sauce.
- Beef - I like to use beef strips, but you can also use ground beef (beef mince) as an alternative. You can also use leftover beef that you want to incorporate into a new dish.
- Pepper - you can add black pepper or even white pepper to add a great flavour and some heat to the steak.
How to make Fried Rice with Beef Strips
- Prepare the Steak: Toss sliced steak with olive oil, salt, and pepper. Set aside.
- Create the Marinade Sauce: In a bowl, combine Chinese five spice, grated ginger, tomato sauce, soy sauce, juice from half the lime, honey, and sesame seeds. Set aside.
- Sauté Aromatics: Heat a large skillet or frying pan over medium-high heat. Add a tablespoon of oil. Sauté minced garlic, sliced green onion, and half of the chopped coriander until fragrant.
- Add Rice and Veggies: Break up large clumps of cooked microwave rice and add it to the pan along with diced carrot. Make a well in the mixture and crack in the egg. Stir the egg as it starts to cook, then mix it through the rice. Add soy sauce, sesame oil, and juice from the remaining lime half. Toss in the peas and stir-fry for 1 minute. Transfer this fried rice mixture with cooked veggies to a serving bowl and cover to keep warm.
- Cook the Beef: Return the pan to heat. Once hot, lay the sliced beef in a single layer and sear for 1 minute on each side.
- Add the Savory Sauce: Pour the prepared marinade sauce over the cooked beef in the pan. Mix well to coat the meat. Allow it to cook for 1-2 minutes, just until the sauce starts to thicken. If it gets too thick, you can add a little water to thin it out.
- Serve and Enjoy: Serve the stir-fried beef over the fried rice, and sprinkle with the remaining chopped coriander and sesame seeds. Enjoy your delicious homemade beef stir-fry with fried rice!
Note: Feel free to adjust the seasoning and ingredients according to your taste preferences.
Top tip when making Fried Rice with Beef Strips
Achieve the Perfect Sear: When cooking the beef, make sure the skillet is really hot before adding the meat. Lay the slices in a single layer and let them sear for about 1 minute on each side. This quick searing locks in the juices and gives a nice caramelized exterior.
Kid-Friendly Variations
- Kids may prefer to skip the Chinese Five Spice and the marinade sauce.
How to Store Fried Rice with Beef Strips
Store in an airtight container in the fridge for 1-2 days.
Equipment
You will need a large skillet, large frying pan or wok, and a stovetop.
