Take your Mushroom Pizza recipe to the next level with this Mushroom Pizza with Feta and Miso paste - such salty, garlicky goodness!

I love a mushroom pizza, and what I love most about it, is that salty umami goodness. I decided to elevate this mushroom pizza recipe by sautéing my mushrooms in Miso paste to really bring out that umami flavour.
Do you cook mushroom before putting on pizza?
Yes! I know it may seem like an extra step in your mushroom pizza recipe, but this is a very worthwhile step indeed. When mushrooms are cooked, at first they release liquid as they crisp up. If you put that on a pizza it’s going to make your pizza soggy or runny.
Sure, in a supreme pizza, or pizza where mushrooms aren’t the centrepiece, you can have very fine slices of mushrooms that don’t do that (because they are so finely sliced), but in THIS recipe, mushrooms are the hero, and we want them piled up. So to make sure they are delicious (and not at all soggy or runny), we will cook them in the pan.
Cooking them in a pan also means we can season them, and this is where the miso paste comes in. Mushrooms and miso paste are a match made in heaven - the umami brings out a lovely meatiness to the mushrooms. And something beautiful happens when you stir miso paste into the mushrooms, it uses the liquid that escaped from the mushrooms when you cooked them and makes a lovely glaze. It’s truly divine.
What’s in our Mushroom Pizza recipe?
- Base - Use a prepared pizza base or if you can find it, a prepared pizza dough ball. I like any that are stone baked, but you can also use Lebanese bread if you want a thinner crust.
- Base topping - Feta cheese all the way here - crumble that salty goodness onto your base.
- Miso Mushrooms - Such delicious bursts of flavour. My favourite is Hikari White Miso paste - I've been able to pick it up at supermarkets in Australia.
- Topping - Cheddar and Mozzarella - for salty and stringy cheesy top.
Top tip for your Mushroom Pizza recipe
If your oven has this setting, try to have it on the fan setting with bottom heat bars. This gives a crispier bottom to your pizza.
Substitutions
- Alternative proteins - Add ham or prosciutto to this.
- Vegetarian - This recipe is vegetarian.
- Dairy Free - Swap the feta for olive tapenade and use dairy free shredded parmesan for the topping. Swap butter for olive oil.
- Gluten Free - Use gluten free pizza bases.
Kid-Friendly Variations
- Option to skip or reduce the amount of miso paste you use.
- Kids may prefer just mushrooms and cheddar and mozzarella mix - they may find feta too strong.
- Chop into fingers.

Ingredients
- 2 pre-prepared pizza bases
- 500 g mushrooms white
- 4 cloves garlic
- ½ bunch green onions
- ½ bunch kale
- 1 tablespoon olive oil 2 tablespoon total for the recipe
- 15 g butter salted
- 1 tablespoon olive oil 2 tablespoon total for the recipe
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano leaves
- 2 tablespoon white miso paste
- 200 g feta
- 250 g grated cheddar and mozzarella mix
- 1 lemon
Instructions
- Preheat oven to 220 C. Place pizza base(s) on a piece of baking paper on a tray.2 pre-prepared pizza bases
- Slice mushrooms and peel and finely chop garlic. Set aside. Finely slice the white part of the green onions and slice the green part on an angle.500 g mushrooms, 4 cloves garlic, ½ bunch green onions
- Tear kale leaves into small pieces. Massage olive oil into leaves to soften.½ bunch kale, 1 tablespoon olive oil
- Place a large frying pan over medium-high heat and add butter and olive oil.15 g butter, 1 tablespoon olive oil
- Add mushrooms, thyme and oregano and cook for 4 minutes until mushrooms are starting to brown, then stir through miso paste until it is like a glaze. If your child doesn’t like salty flavours then use less paste or skip it.500 g mushrooms, 1 teaspoon dried thyme, 1 teaspoon dried oregano leaves, 2 tablespoon white miso paste
- Add kale, garlic and the white part of green onions. Cook for another minute or until kale turns bright green and garlic is fragrant. Take off the heat and set aside.4 cloves garlic, ½ bunch kale, ½ bunch green onions
- Crumble feta over your adult pizza base(s) and top with kale, mushrooms and cheddar and mozzarella mix. Place in the oven for 12 mins, or until golden brown. Kids may prefer to skip feta and kale completely.200 g feta, 250 g grated cheddar and mozzarella mix
- Cut lemon into slices. Serve slices of pizza, squeeze over lemon and scatter remaining green onions.Kids may prefer pizza sliced into fingers, with no green onion.1 lemon, ½ bunch green onions
