When you want an easy dinner that looks impressive, this oven baked salmon is seriously delicious and seriously low-maintenance.
What makes this Oven Baked Salmon so good?
The first wonderful thing about this dinner is the herby-honey marinade. One might question the combination of herbs and honey, but with a dash of soy the flavours come together to create the most gorgeous sweet and savoury glaze that is bursting with fresh herby flavours.
The second wonderful thing is that it is really very easy. You can do each step one at a time and even though there are multiple components to this meal, they all have their time and place in preparation, so you never feel like you’re juggling multiple dishes at the same time when preparing this. The corn is as simple as it gets (boil, drizzle, grate), and it just looks and tastes wonderful.
Finally, the smell. Cooking this dinner will fill your house with the wonderful scent of honey and herbs and soy and salmon, and by the time you sit down to dinner your mouth will be watering and you’ll be ready to eat.
How long should you cook salmon in the oven?
You should cook salmon in a 200 C oven for 12 minutes, give or take a minute or two depending on the thickness of the salmon and your cooking preference. In this recipe, I cooked for 12 minutes and it was perfectly cooked all the way through, while still being satisfyingly moist and tasty.
Which Salad should I serve with Oven Baked Salmon?
This is a really simple salad but one of my favourites. It’s made of oakleaf lettuce, chopped herbs, and a simple vinaigrette of olive oil, lemon juice, salt and pepper. The curly leaves catch the dressing so it’s full of flavour, and goes with just about any meal. It’s a perfect salad to have up your sleeve because it is just so simple and delicious.
Top tip
The herbs in this dish are what make it, and you can really use any combination of herbs, so if you have herbs in your veggie bin that you’re not sure what to do with, this really is the perfect dinner. Finely chop, add to the honey soy olive oil marinade, and bake in the oven.

- Alternative proteins - Chicken tenderloins would work really well here, or thinly cut chicken breast.
- Vegetarian - Use “fish free” cakes, tofu slices, pumpkin slices, Halloumi, or a combination of these to make this dish vegetarian.
- Dairy Free - Skip the parmesan cheese.
- Gluten Free - Swap soy sauce for tamari.

Ingredients
- 2 cloves garlic
- ½ bunch coriander
- 1 lemon
- ½ bunch chives
- 1 tablespoon olive oil 2 tablespoon total for the recipe
- 2 teaspoon honey
- 2 teaspoon soy sauce

Instructions
- Preheat your oven to 200 C (400 F) and line a baking tray with paper.
- Mince garlic. Roughly chop coriander leaves and finely chop stalks. Zest lemon. Finely slice chives.2 cloves garlic, ½ bunch coriander, 1 lemon, ½ bunch chives
- Combine olive oil, honey, zest, coriander stalks, garlic, soy, salt and pepper in a bowl, mix, then add salmon. Option to keep your child’s salmon plain if they prefer. - Pick lettuce leaves and add to a bowl and top with chopped chives and coriander leaves. Drizzle over olive oil, squeeze over lemon juice and season with salt and pepper.½ bunch coriander, 1 lemon, ½ bunch chives, ½ oakleaf lettuce, 1 tablespoon olive oil, ¼ teaspoon salt and pepper
- Add salmon to the tray and place in the oven for 12 mins (+/- 1-2 mins depending on thickness).4 salmon fillets
- Place a medium saucepan of water on high heat to boil. Once boiling, cook corn for 5 minutes, then drain.4 corn cobettes
