Juicy pork steaks seasoned with cumin, coriander, garlic powder and brown sugar, and then caramelised in the pan with honey and that hit of tangy apple cider vinegar - yum! We’ll serve this with a moreish honey roast carrots salad with caramelised cashews, creamy goats cheese and avocado and spicy rocket. It’s a dreamy dinner that you’ll want to make again and again.
And, with Christmas coming up, if you’re looking for a good looking salad to take to a BBQ or gathering, you can make this salad all by itself without the pork.

How to make Pork Steaks with Honey Carrot and Cashew Salad
1. Heat your oven to 200 C and line a baking tray.
2. Mix cumin, thyme, coriander, garlic powder, brown sugar, salt and pepper in a large bowl. Mix through olive oil and add pork to coat. You can also keep some pork plain for your little one if you prefer. Set aside at room temperature.
- 1 tablespoon ground cumin
- 1 teaspoon dried thyme
- 1 tablespoon ground coriander
- 1 teaspoon garlic powder
- 2 teaspoon brown sugar
- ½ teaspoon salt
- Pepper to taste
- 2 tablespoon olive oil
- 4 pork loin steaks
3. Peel carrots and slice lengthwise into quarters. Add to the baking tray and drizzle over honey, and sprinkle salt and pepper. Place in the oven for 10 minutes.

4. Trim woody ends from broccolini and discard. Halve avocado, remove seed and slice flesh into long pieces.
- 1 bunch broccolini

5. Mix honey and apple cider vinegar and divide into two portions. Add mustard and olive oil to one portion, this will be our salad dressing. Keep the other portion for cooking the pork.
- 2 tablespoon honey
- 2 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- 2 tablespoon olive oil
6. When the timer goes for your carrots, turn and add cashews. Coat carrots and cashews in honey on the tray as you turn them. Return to the oven for another 10 minutes.
- ½ cup raw cashews
7. Place a frying pan on medium-high heat. Once warm, cook pork for 3-4 minutes on each side, depending on thickness. At the last minute of cooking, pour in the honey / apple cider vinegar mixture to coat and let it reduce slightly.
8. Remove the pork from the pan and set aside to rest. Add the broccolini to the pan and cook for 1-2 minutes, turning every so often, until bright green.

9. Serve your little ones portions of carrots, broccolini, avocado and goat’s cheese.
Create your salad by layering rocket, broccolini, honeyed carrots and cashews, avocado and goats cheese.

- Alternative proteins - Swap pork steak for thin breast schnitzels (chicken breast slice in half), or diced lamb and coat it in the seasoning.
