Sausage rolls are an Aussie icon, and now we’re well and truly into the footy season, you can make these better for you homemade sausage rolls for a delicious weeknight dinner.
What makes these sausage rolls different?
Instead of using store-bought sausages, these sausage rolls are made with pork mince, finely grated carrot and apple, and fennel seeds. The carrot and apple make them extra juicy, as well as adding some hidden vegetables, and the fennel seeds give a lovely earthy flavour that goes really well with the pork.
They’re very quick to put together in three easy steps.
- Mix sausage ingredients together in a bowl.
- Wrap in pastry and place in the oven.
- Prepare the salad.
How to get crispy bottoms on your sausage rolls?
There are no soggy bottoms here - to get crispy bottoms we use a nice hot oven and cook for just 20 minutes. This also means the meat stays nice and juicy too.
Another tip for keeping the base of your sausage roll crispy, is to not pre-heat your baking tray. If you do, the pastry will start to soften and “melt” before it goes in the hot oven, and they will be soggy.
Ingredients for Homemade Sausage Rolls
- Sausage - Pork mince (you can swap for future mince or beef mince if you prefer), fennel seeds, Worcestershire sauce, soy sauce, salt and pepper, grated carrot and apple. NOTE: We do not use egg - they don’t need it, and it will make them a bit soggy.
- Pastry - Use good quality puff pastry like Careme all butter puff pastry for best results. Brush with milk and sprinkle over black sesame seeds.
- Salad dressing - Mustard, white wine vinegar, olive oil, salt and pepper.
- Salad - Simple salad of tomato, avocado, oakleaf lettuce and chives.
Top tip
Don’t overstuff your sausage rolls. The pastry will puff up nicely and you want it to stay closed.
Substitutions
- Alternative proteins - Swap pork for beef mince if you like.
- Vegetarian - Use plant based mince, or mashed lentils.
- Dairy Free - Use dairy free puff pastry. Use dairy free milk.
- Gluten Free - Use gluten free puff pastry.

- 330 g puff pastry
- 500 g pork mince
- 2 teaspoon fennel seeds opt.
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- ¼ teaspoon salt and pepper ½ teaspoon total for the recipe
- 1 carrot
- 1 apple
- 2 tablespoon milk
- 2 tablespoon black sesame seeds
- 2 teaspoon Dijon mustard
- 1 tablespoon white wine vinegar
- 2 tablespoon olive oil
- ¼ teaspoon salt and pepper ½ teaspoon total for the recipe
- 200 g baby tomatoes
- 1 avocado
- ½ bunch chives
- ½ oakleaf lettuce
- ¼ cup tomato sauce sub tomato relish
Instructions
- Preheat your oven to 200 C, line a baking tray and take puff pastry from the freezer.330 g puff pastry
- In a large bowl add pork mince, fennel seeds, Worcestershire sauce, soy sauce and salt and pepper. Grate carrot and apple into the bowl, then mix well.500 g pork mince, 2 teaspoon fennel seeds, 1 tablespoon Worcestershire sauce, 1 tablespoon soy sauce, ¼ teaspoon salt and pepper, 1 carrot, 1 apple
- Lay pastry out and slice in half lengthwise. Divide mixture along pastry and roll up, joining on the underside of the rolls.TIP: Don’t overstuff the rolls, as you want them to close easily.330 g puff pastry
- Brush milk over the rolls, scatter over sesame seeds, then slice into sections, about 3-4 cm long. Place in the oven for 20 minutes.2 tablespoon milk, 2 tablespoon black sesame seeds
